Clever

Combining the full-immersion of a Press Pot and the paper filter of a Pour Over, the Clever Method aims (quite successfully, we think) to get as much flavor as possible out from your beans while leaving a clean, balanced cup of coffee.

Step 1

Heat water

to 200˚ F, or about 30 seconds off the boil.

Step 2

Weigh out

22 grams of coffee.

Step 3

Grind

at medium, or about the same level as for an auto-drip machine.

Step 4

Place #4 paper filter

in your Clever, and pre-wet it with hot water. This will ensure that you don’t get any papery taste in your coffee, while also pre-heating the Clever.

Step 5

Place ground coffee

in the Clever.

Step 6

Pour in 12oz (or 340g) of water

(we measure by weight to ensure accuracy), making sure to wet all the grinds, start timer, and cover with top.

Step 7

After 1.5 minutes

stir the grinds vigorously for a few seconds, and cover.

Step 8

After 3 minutes

place your Clever on top of a cup and let the coffee drip through.
